After last week’s blood glucose response test, I decided to try something with more carbs this time around.
The salami with mostly fat and protein didn’t significantly affect my blood sugar.
Conveniently enough, I have a container of steel cut oats that I bought a few months prior to starting the keto diet. It’s been about 10-11 months since I’ve had a bowl of oatmeal.
The only thing I added to these oats were water and salt.
This will be the first test of many where I eat a specific type of food and then measure my blood glucose after 1-hr and 2-hrs.
Really committing on the keto diet means not only choosing the right foods but also understanding what is happening to your body as you eat more fat.
As you can tell from my chicken scratch above, I was a good student while learning about nutritional ketosis!
